Lemon Cake Recipe

We LOVE lemon cake and this lemon cake recipe is a winner!

This little sweet lemon cake treat is sure to satisfy those sugar cravings and leave you still feeling like you didn't totally stuff your face with unhealthy delights.

Lemon cake recipe

Ingredients:

  • 2 cups almond meal
  • 1 tsp baking powder
  • Pinch of salt
  • 1/4 cup caster sugar
  • 2 tbs icing sugar
  • 4 eggs
  • 1/4 cup lemon juice
  • 150g melted butter
  • 1tsp vanilla extract

Method:

Mix dry ingredients together and then whisk wet ingredients before adding into the dry mix and then pop into a muffin tin.
Sprinkle with flaked almonds. I baked mine in my Ninja Multicooker on 150 for 20 minutes. Serve: 14 muffins.
