Weetbix Egg Cups 

Servings: 6

Ingredients

  • 6 Weetbix

  •  cup honey or sweetener of choice

  • ½ cup natural peanut butter or nut butter of choice

  •  cup dark chocolate chips or chocolate of choice (Easter eggs if any leftover!)

  • Pinch of flaky sea salt

  • Optional: Decorate with crushed Easter egg

Method

  1. Crush the Weetbix into a bowl.

  2. Mix in the honey and peanut butter until combined.

  3. Press the mixture into 6 silicone moulds.

  4. Melt the chocolate and pour over each cup.

  5. Sprinkle with flaky sea salt.

  6. Freeze for 1 hour until set.

Ingredients

  • 6 Weetbix

  •  cup honey or sweetener of choice

  • ½ cup natural peanut butter or nut butter of choice

  •  cup dark chocolate chips or chocolate of choice

  • Pinch of flaky sea salt

Method:

  1. Line a loaf pan with baking paper.

  2. Crush the Weetbix into a bowl.

  3. Mix in the honey and peanut butter until well combined.

  4. Press the mixture into the loaf pan evenly and firmly.

  5. Melt the chocolate and spread over the top.

  6. Sprinkle with flaky sea salt.

  7. Freeze for 1 hour, then slice into squares.

Ingredients:

  • 4 Weetbix, crushed
  • ¼ cup coconut oil, melted
  • 2 tbsp honey or maple syrup
  • ¼ cup natural peanut butter or almond butter
  • ¼ cup dark chocolate chips (70% or higher cocoa content)
  • ¼ cup unsweetened shredded coconut
  • ¼ cup dried cranberries or goji berries
  • ¼ cup chopped almonds or any preferred nuts
  • ¼ cup mini marshmallows 
  • ½ tsp vanilla extract

Method:

  1. In a large mixing bowl, combine crushed Weetbix, melted coconut oil, honey or maple syrup, and peanut butter. Mix well until all ingredients are combined and the mixture is sticky.
  2. Fold in dark chocolate chips, shredded coconut, dried cranberries, chopped almonds, and vanilla extract. If you’re using mini marshmallows, fold them in last.

Ingredients for the weetbix slice:

For the base:

  • 8 Weetbix, crushed
  • ½ cup almond flour
  • ¼ cup coconut oil, melted
  • ¼ cup honey or maple syrup
  • ¼ tsp sea salt

For the salted caramel layer:

  • ½ cup Medjool dates, pitted and soaked in warm water for 10 minutes
  • ¼ cup natural almond butter
  • 1-2 tbsp coconut cream
  • 1 tsp vanilla extract
  • ¼ tsp sea salt (adjust to taste)

For the chocolate topping:

  • ¼ cup dark chocolate chips (70% or higher cocoa content)
  • 1 tsp coconut oil

Method:

  1. In a bowl, mix crushed Weetbix, almond flour, melted coconut oil, honey or maple syrup, and sea salt until combined.
  2. Press the mixture into a lined baking dish, making sure it's even and firm. Place in the fridge to set while you prepare the caramel layer.
  3. Drain the soaked dates and blend them in a food processor with almond butter, coconut cream, vanilla extract, and sea salt until smooth and creamy.
  4. Spread the caramel mixture evenly over the Weetbix base. Place the dish back in the fridge to allow the caramel layer to firm up.
  5. Melt the dark chocolate chips with coconut oil in a microwave or over a double boiler until smooth.
  6. Pour the melted chocolate over the caramel layer and spread it evenly.

Ingredients:

  • 4 Weet-Bix biscuits, crushed
  • ½ cup unsweetened shredded coconut
  • ¼ cup unsweetened cocoa powder
  • ½ cup almond butter (or any nut butter)
  • ¼ cup honey or maple syrup
  • ¼ cup unsweetened almond milk (or any milk)
  • 1 tsp vanilla extract
  • ¼ cup dark chocolate chips (optional, for extra richness)
  • 1 tbsp chia seeds (optional, for added fibre)

 Method

  1. In a large mixing bowl, combine the crushed Weet-Bix, shredded coconut, and cocoa powder.
  2. In a separate bowl, mix together the almond butter, honey (or maple syrup), almond milk, and vanilla extract until smooth.
