Ingredients (serves 2)

  • ½ cup (90 g) chia seeds

  • 2 tbsp maple syrup or honey

  • ½ tsp vanilla extract

  • 1½ cups (325 ml) milk of choice

  • ½ lemon (juice and zest)

  • 1½ cups (310 g) Greek yoghurt

  • ¾ cup (75 g) frozen blueberries

  • ½ tsp lemon zest, for topping

Method

  1. In a bowl, mix chia seeds, milk, maple syrup or honey, vanilla, lemon juice and zest, and 1 cup of yoghurt.

  2. Stir well, cover, and refrigerate for at least 2 hours (or overnight) until thick and creamy.

  3. Warm the blueberries in the microwave for about a minute until soft.

  4. Layer the chia pudding and blueberries in glasses or jars.

  5. Top with the remaining yoghurt and a sprinkle of lemon zest before serving.
