Ingredients
For the chicken taco bowl
- 500g chicken breast
- Extra virgin olive oil spray
- Juice of 1 lime
- 1 packet Mingle taco seasoning
- 1 cup brown rice, uncooked
- 400g tinned black beans
- 1 avocado, chopped
- 1/4 purple cabbage, shredded
- 1/2 bunch coriander, chopped
For the mango salsa
- 1 ripe mango
- 1/4 bunch coriander
- 1/2 red onion, diced
- 1 red chilli, sliced to taste
- Juice of 1 lime
Method
Add the chicken to a bowl with the lime juice, olive oil spray and taco seasoning. Allow to marinate for 15 to 30 minutes.
Heat a large pan over medium-high heat and lightly spray with olive oil. Cook the chicken for 4 to 5 minutes per side, depending on thickness. Allow to rest for 5 minutes before chopping into bite-sized pieces.
Meanwhile, add the brown rice to a pot with 2 cups of water. Bring to the boil, then reduce to a simmer and cook until soft and fluffy. Stir through chopped coriander.
To make the mango salsa, cube the mango and place into a bowl with the red onion, chilli and coriander. Drizzle with lime juice and gently toss to combine.
To assemble the bowls, divide the rice, black beans, cabbage, chicken and avocado between four bowls. Top with mango salsa and extra coriander.
