Gut Healthy Sweet Potato Nachos

Ingredients
Slow cooker ingreds:
- 300g mince beef (VG use extra black beans if preferred)
- 400g can mixed beans
- 400g can chopped tomatoes
- 3 tbs tomato paste
- 1 large zucchini, diced
- 2 small red capsicum, diced
- 1/2 red onion, diced
- 2 tsp garlic powder
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp chilli powder

1 tsp Cajun seasoning
Sweet potatoes
- 2 medium sized sweet potatoes, seasoned with cumin and Cajun seasoning
- 2 handfuls mozzarella
- 1 avocado, smashed
- 1/2 red onion, diced
- 200g can corn
- Fresh coriander
- Sliced chilli and diced tomato
Method
Add into slow cooker the mince beef and all the ingredients listed above. (Not the sweet potato ingreds.) Cook for 4 hours on high or 6-8 hours on low.
Half an hour before serving, preheat your oven to 200 degrees. Slice your sweet potato into coins and drizzle olive oil and season with cumin and Cajun seasoning. Bake in the oven for 30 minutes
Once done, top with slow cooker beef, cheese and red onion and add back to the oven until the cheese is melted.
Serve with diced tomato, chilli, mashed avocado and corn salad. Sprinkle some chopped coriander.
