Anti-inflammatory chicken and vegetable soup recipe
Serves 4
Ingredients
- 1 head cauliflower, florets
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 carrots, diced
- 4 cloves garlic, minced
- 1 tbsp ginger, grated
- 1/2 tsp turmeric powder
- 1 tsp paprika
- 1 tsp dried mint
- Salt and pepper, to taste
- 4 cups chicken broth
- 2 cooked chicken breasts, shredded
Method
Heat the olive oil in a large pot over medium heat.
Add the onion and carrot and sauté for 3–4 minutes until softened.
Stir through the garlic and ginger and cook for another minute until fragrant.
Add the paprika, turmeric, dried mint, salt and pepper and stir for 30 seconds.
Add the cauliflower florets and chicken broth.
Cover and bring to the boil, then reduce to a simmer and cook for 8–10 minutes until the cauliflower is tender.
Using a slotted spoon, transfer around 80% of the cauliflower to a blender and blend until smooth.
Pour the blended cauliflower back into the pot along with the shredded chicken and stir to combine.
Taste and adjust seasoning before serving.
