Turmeric & Ginger Chicken Drumsticks

Serves 4

 Ingredients

  • 2 tbsp olive oil
  • 1 tbsp turmeric powder
  • 1 tsp ginger powder
  • 2 cloves garlic, minced
  • 1 tsp cumin powder
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 1 lemon, juiced
  • 8 chicken drumsticks
  • ½ cup fresh coriander to serve
  • 2 tbsp sesame seeds to serve

Method 

  1. In a small bowl, whisk together the olive oil, turmeric, ginger, garlic, cumin, smoked paprika salt, pepper and lemon juice until well combined.
  2. Place the chicken drumsticks in a large zip-lock bag or a shallow dish. Pour the marinade over the drumsticks, coating them well. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 8 hours for a stronger flavor).
  3. Preheat your oven to 200°C and line a baking tray with baking paper.
  4. Arrange the marinated drumsticks on the prepared baking tray and bake for 25-30 minutes, turning halfway through, until the drumsticks are golden and cooked through. Sprinkle over fresh coriander and sesame seeds to serve.
