Turmeric & Ginger Chicken Drumsticks
Serves 4
Ingredients
- 2 tbsp olive oil
- 1 tbsp turmeric powder
- 1 tsp ginger powder
- 2 cloves garlic, minced
- 1 tsp cumin powder
- 1/2 tsp smoked paprika
- salt and pepper to taste
- 1 lemon, juiced
- 8 chicken drumsticks
- ½ cup fresh coriander to serve
- 2 tbsp sesame seeds to serve
Method
- In a small bowl, whisk together the olive oil, turmeric, ginger, garlic, cumin, smoked paprika salt, pepper and lemon juice until well combined.
- Place the chicken drumsticks in a large zip-lock bag or a shallow dish. Pour the marinade over the drumsticks, coating them well. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to 8 hours for a stronger flavor).
- Preheat your oven to 200°C and line a baking tray with baking paper.
- Arrange the marinated drumsticks on the prepared baking tray and bake for 25-30 minutes, turning halfway through, until the drumsticks are golden and cooked through. Sprinkle over fresh coriander and sesame seeds to serve.
