Turkey Mince, Artichokes & Cherry Tomatoes
Turkey is a great source of high quality protein. It is low in fat, a good source of B vitamins, selenium and is a source of tryptophan which may help increase serotonin levels in the brain which may improve mood. It is also a precursor to melatonin, the sleepy hormone and may help promote relaxation and reduce stress. Artichoke is used as a herbal medicine for liver health and are also great for the liver as a food. Artichokes contain cynarin which is known for stimulating bile production. Bile helps us to digest fats efficiently and flush out any toxins from our system supporting the liver’s process. Olives are rich in monounsaturated fats, primarily oleic acid, which can improve heart health by lowering "bad" LDL cholesterol and raising "good" HDL cholesterol. Like salmon, they contain antioxidants like vitamin E and polyphenols, which protect against cellular damage, reduce inflammation, and may lower the risk of chronic diseases. These same polyphenols in olives have anti-inflammatory effects that can be beneficial for heart and joint health.

- 1 tbsp olive oil
- 500g turkey mince
- 1 tsp dried oregano
- 1 tsp garlic powder
- ½ cup tomato passata
- 1 cup cherry tomatoes
- 1 cup pitted black olives
- 2 cups baby spinach
- salt and pepper to taste
- 1 cup artichoke hearts, drained
- ½ cup fresh parsley, roughly chopped
- 1 lemon, cut into wedges, to serve
Heat the oil in a pan over medium heat. Add the turkey and cook for five to seven minutes, breaking it up as it cooks. Add the spices, passata, cherry tomatoes, olives, spinach, salt, and pepper. Stir well, cover the pan with a lid, and simmer on low heat for about 10 minutes. Add the artichokes to the pan, stir, and simmer uncovered for another two to three minutes. Transfer to a serving platter and sprinkle over parsley and arrange lemon wedges around the edges.
