Tuna & Chickpea Waldorf Salad

Serves 4

 Ingredients

  • ½ avocado, peeled and diced
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil
  • salt and pepper to taste
  • 1 tbsp water
  • 1 can 400g chickpea, drained
  • 2 stalks celery, diced
  • 1 apple, cored and diced
  • 1 cup grapes, halved
  • ½ red onion, diced
  • ½ cup parsley, chopped
  • ½ cup walnuts, chopped
  • 4 cups baby spinach
  • 1 can 95g tuna, drained

Method

Place avocado, vinegar, mustard, olive oil, sat, pepper and water into a blender to make dressing. Blend until smooth. Combine all other ingredients into a large bowl, except tuna, and toss to combine. Divide into bowls, top with a small amount of tuna and dress well with dressing.
