Sweet Potato & Spinach Fritters
Serves 2
Ingredients
- 1 sweet potato, grated
- 1 cup baby spinach, chopped
- 2 eggs, whisked
- 30g wholemeal flour
- salt and pepper to taste
- ½ cup greek yoghurt
- Juice of ½ a lime
- 2 tbsp fresh coriander
Method
- Preheat oven to 200C and line a baking tray with baking paper.
- In a bowl mix the sweet potato, spinach, eggs and flour and season well.
- Scoop the mixture onto the baking tray creating small discs in a single layer. Bake in the oven for 20 minutes, flipping halfway, or until golden and crunchy on the edges.
- In a small bowl mix together yoghurt, lime juice, a pinch of salt and coriander.
- To serve dollop yoghurt onto a plate and lay fritters on top.
