Rosti-Topped Lamb & Rosemary Pie

Rosti-Topped Lamb & Rosemary Pie

(Serves 4)


Ingredients
For the Filling:
•    300g lean lamb mince 
•    1 cup (200g) cooked green lentils  
•    1 medium onion, finely diced  
•    2 medium carrots, diced 
•    2 celery stalks, diced  
•    2 garlic cloves, minced  
•    1 tbsp olive oil  
•    1 cup (240ml) low-sodium lamb or beef stock 
•    1 tbsp tomato paste  
•    1 tsp fresh rosemary, finely chopped  
•    1 tsp smoked paprika 

For the Rosti Topping:
•    400g potatoes, grated
•    300g sweet potatoes, grated 
•    1 tbsp olive oil  
•    Salt and pepper to taste

Method

  1.  Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened. 
  2. Add lamb mince and cook until browned. Stir in lentils, tomato paste, rosemary, smoked paprika, and stock. 
  3. Simmer for 10-15 minutes, allowing the flavours to meld and the mixture to thicken slightly. 
  4. Squeeze excess water from the grated potatoes and sweet potatoes using a clean tea towel.
  5. Mix the grated potatoes with olive oil, salt, and pepper.
  6. Preheat your oven to 200°C (400°F).  
  7. Transfer the lamb filling to a baking dish and spread the rösti mixture evenly on top.  
  8. Bake for 25-30 minutes, or until the topping is golden and crispy.
