Rosti-Topped Lamb & Rosemary Pie
(Serves 4)
Ingredients
For the Filling:
• 300g lean lamb mince
• 1 cup (200g) cooked green lentils
• 1 medium onion, finely diced
• 2 medium carrots, diced
• 2 celery stalks, diced
• 2 garlic cloves, minced
• 1 tbsp olive oil
• 1 cup (240ml) low-sodium lamb or beef stock
• 1 tbsp tomato paste
• 1 tsp fresh rosemary, finely chopped
• 1 tsp smoked paprika
For the Rosti Topping:
• 400g potatoes, grated
• 300g sweet potatoes, grated
• 1 tbsp olive oil
• Salt and pepper to taste
Method
- Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened.
- Add lamb mince and cook until browned. Stir in lentils, tomato paste, rosemary, smoked paprika, and stock.
- Simmer for 10-15 minutes, allowing the flavours to meld and the mixture to thicken slightly.
- Squeeze excess water from the grated potatoes and sweet potatoes using a clean tea towel.
- Mix the grated potatoes with olive oil, salt, and pepper.
- Preheat your oven to 200°C (400°F).
- Transfer the lamb filling to a baking dish and spread the rösti mixture evenly on top.
- Bake for 25-30 minutes, or until the topping is golden and crispy.
