Herby Lamb chops with Brussels Sprouts
Serves 4
Ingredients
- 450g lamb chops
- salt and pepper
- 2 sprigs of fresh rosemary, stems removed, chopped
- 2 tbsp fresh thyme, stems removed, chopped
- 2 tbsp fresh parsley, stems removed, chopped
- 1 clove garlic, minced
- 2 tbsp olive oil
- 3 cups Brussel sprouts, halved
- 2 sweet potatoes, cubed
- 6 cups baby spinach
- ¼ tsp chilli flakes
Method
- In a small bowl, combine the chopped rosemary, thyme, parsley, minced garlic, olive oil, salt, and pepper. Rub this herb mixture all over the lamb chops and season well.
- Let the lamb chops marinate for at least 15-30 minutes, or up to 2 hours in the fridge for a stronger flavor.
- Preheat oven to 200C and toss the Brussels sprouts and sweet potato cubes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.
- Roast for 20-25 minutes, stirring halfway, until sprouts are crispy and golden. Sprinkle with chili flakes in the last 5 minutes of roasting.
- Heat a large fry pan over medium-high heat. Add a drizzle of olive oil.
- Sear the lamb chops for 3-4 minutes per side, or until they reach your desired level of doneness (medium-rare is usually around 145°F or 63°C internal temperature).
- Remove from the pan and let rest for a few minutes. Throw baby spinach in the same pan and let it wilt.
- Serve the lamb chops on a bed of baby spinach alongside the roasted Brussels sprouts and potato.
