Halloumi, pineapple & Veg Kebabs

 

Halloumi is a salty cheese originally from Cyprus which is an excdllent source of protein providing about 21g per 100g or 21% protein. It is also a great source of calcium, healthy fats, zinc, selenium and B vitamins. Pineapple contains bromelain, an enzyme that aids in digestion by breaking down proteins. Bromelain has anti-inflammatory and digestive properties, which can help reduce bloating, especially if it is caused by poor digestion of protein-rich foods. Additionally, the high water and fiber content in pineapple can promote a healthy gut and contains vitamins C, A, B6, manganese, magnesium and antioxidants.

Ingredients

  • BBQ skewers
  • 250g halloumi cheese, cubed
  • 1 1/2 cup fresh pineapple, cubed
  • 1 red capsicum, cubed
  • 1 zucchini, sliced into rounds
  • 1 cup mushrooms, halved
  • 1 red onion, sliced into chunks
  • ½ cup kecap manis (sweet soy sauce)

Method

  1. Preheat your oven to 220C.
  2. On each skewer, thread a halloumi, pineapple, red capsicum, zucchini, mushroom and red onion, repeating until the skewer is full.
  3. Brush the kecap manis over the assembled skewers.
  4. Place the skewers on a lined baking sheet. Bake for 10-12 minutes, turning halfway through.
