Eggs & Pumpkin seeds

Serves 1

 Ingredients

  • 2 large eggs
  • 2 tbsp pumpkin seeds
  • 2 tsp nutritional yeast
  • Salt and pepper to taste
  • 1/4 tsp smoked paprika

Method

  1. Boil or scramble the eggs according to your preference. To boil, cook them in water for about 8-10 minutes for hard-boiled eggs, or 5-6 minutes for soft-boiled eggs. If scrambling, whisk eggs and cook them in a pan over medium heat, stirring occasionally until fully cooked.
  2. Once the eggs are cooked, slice them if boiled or plate them if scrambled. Sprinkle the toasted pumpkin seeds and nutritional yeast over the eggs.
  3.  Season with salt, pepper, and smoked paprika.
