Eggs & Pumpkin seeds
Eggs & Pumpkin seeds
Serves 1
Ingredients
- 2 large eggs
- 2 tbsp pumpkin seeds
- 2 tsp nutritional yeast
- Salt and pepper to taste
- 1/4 tsp smoked paprika
Method
- Boil or scramble the eggs according to your preference. To boil, cook them in water for about 8-10 minutes for hard-boiled eggs, or 5-6 minutes for soft-boiled eggs. If scrambling, whisk eggs and cook them in a pan over medium heat, stirring occasionally until fully cooked.
- Once the eggs are cooked, slice them if boiled or plate them if scrambled. Sprinkle the toasted pumpkin seeds and nutritional yeast over the eggs.
- Season with salt, pepper, and smoked paprika.
Benefits
Eggs provide high-quality protein, B vitamins, and choline, essential for muscle repair and brain function. Pumpkin seeds or pepitas are nutrient dense containing magnesium, zinc and healthy fats. Nutritional yeast provides B vitamins, including B12, which is essential for nerve function and the production of red blood cells.
