Cinnamon Almonds

Serves 4

 Ingredients

  • 1 cup raw almonds
  • 1 tbsp coconut oil
  • 1 tbsp cinnamon
  • 1/4 tsp sea salt
  • 1/4 tsp vanilla extract

Method

  1. Preheat your oven to 175C and line a baking sheet with baking paper.
  2. In a bowl, toss the raw almonds with the coconut oil until they are well coated.
  3. Add the cinnamon, sea salt, and vanilla extract to the almonds. Toss again until evenly coated. Spread the almonds in a single layer on the prepared baking sheet.
  4. Roast for about 15-20 minutes, stirring once or twice to ensure even roasting. Keep an eye on them to prevent burning.
  5. Once they are golden and fragrant, remove from the oven and let the almonds cool completely on the baking sheet. Store in an airtight container at room temperature for up to a week.
