Cinnamon Almond flour pancakes with Greek yoghurt

Serves 3

Ingredients

For the Pancakes:

  • 1 cup almond flour
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any milk of your choice)
  • 1 tbsp coconut flour (optional for added texture)
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 tbsp honey or maple syrup (optional for sweetness)
  • 1 tbsp coconut oil or butter, for cooking

For the Topping:

  • 1/2 cup Greek yogurt (plain or vanilla)
  • 1 tsp cinnamon

 Method

  1. In a mixing bowl, whisk together the almond flour, coconut flour (if using), cinnamon, baking powder, and salt.
  2. In a separate bowl, beat the eggs, then add the almond milk, vanilla extract, and honey (if using).
  3. Add the wet ingredients to the dry ingredients and mix until fully combined. The batter should be thick but pourable. If it’s too thick, add a little more milk to reach your desired consistency.
  4.  Heat a non-stick skillet or griddle over medium-low heat and add a small amount of coconut oil or butter to grease the surface.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake.
  6. Cook for 2-3 minutes on one side, until small bubbles form on the surface, then flip and cook for another 1-2 minutes on the other side until golden brown and cooked through. Repeat with the remaining batter. 
  7. Stack the pancakes on a plate and top with a generous dollop of Greek yogurt.
  8. Sprinkle with cinnamon. Leftover pancakes can be stored in the fridge for 1-2 days or frozen for longer storage. Reheat them in the microwave or toaster.
