Chilli-Stuffed Capsicum with Feta Topping

(Serves 4)


Ingredients
For the Stuffed Peppers:
•    4 large red capsicums, halved and deseeded  
•    250g lean turkey mince  
•    1 cup (200g) cooked green lentils 
•    1 medium onion, finely diced  
•    2 garlic cloves, minced 
•    1 medium zucchini, grated  
•    1 tsp olive oil  
•    2 tbsp tomato paste 
•    1 tsp smoked paprika  
•    1 tsp ground cumin 
•    1/2 tsp chilli flakes (optional, for metabolism-boosting heat)
•    Salt and pepper to taste

For the Feta Topping:
•    1/4 cup (60g) crumbled feta cheese 
•    2 tbsp Greek yogurt  
•    1 tbsp chopped fresh parsley 

Method

  1. Preheat your oven to 200°C (400°F).
  2. Arrange the halved capsicums on a baking tray, cut side up, and lightly brush with olive oil. Roast for 10 minutes until slightly softened.
  3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until fragrant.
  4. Add the turkey mince and cook until browned. Stir in the grated zucchini, tomato paste, smoked paprika, cumin, and chilli flakes. Cook for 5 minutes. 
  5. Add the cooked lentils and mix well. Simmer for 5-7 minutes until the mixture is thickened. Season with salt and pepper.
  6. Spoon the filling into the roasted capsicums.
  7. In a small bowl, mix the crumbled feta, Greek yogurt, and parsley. Top each stuffed capsicum with a dollop of the feta mixture.
  8. Bake for 10-15 minutes until the capsicums are tender and the topping is slightly golden.
