Chilli-Stuffed Capsicum with Feta Topping
(Serves 4)
Ingredients
For the Stuffed Peppers:
• 4 large red capsicums, halved and deseeded
• 250g lean turkey mince
• 1 cup (200g) cooked green lentils
• 1 medium onion, finely diced
• 2 garlic cloves, minced
• 1 medium zucchini, grated
• 1 tsp olive oil
• 2 tbsp tomato paste
• 1 tsp smoked paprika
• 1 tsp ground cumin
• 1/2 tsp chilli flakes (optional, for metabolism-boosting heat)
• Salt and pepper to taste
For the Feta Topping:
• 1/4 cup (60g) crumbled feta cheese
• 2 tbsp Greek yogurt
• 1 tbsp chopped fresh parsley
Method
- Preheat your oven to 200°C (400°F).
- Arrange the halved capsicums on a baking tray, cut side up, and lightly brush with olive oil. Roast for 10 minutes until slightly softened.
- Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until fragrant.
- Add the turkey mince and cook until browned. Stir in the grated zucchini, tomato paste, smoked paprika, cumin, and chilli flakes. Cook for 5 minutes.
- Add the cooked lentils and mix well. Simmer for 5-7 minutes until the mixture is thickened. Season with salt and pepper.
- Spoon the filling into the roasted capsicums.
- In a small bowl, mix the crumbled feta, Greek yogurt, and parsley. Top each stuffed capsicum with a dollop of the feta mixture.
- Bake for 10-15 minutes until the capsicums are tender and the topping is slightly golden.
