Chicken Gyros

Ingredients

(Serves 4)
For the Chicken:
•    500g skinless chicken thighs  
•    2 tbsp Greek yogurt  
•    2 tbsp lemon juice 
•    2 garlic cloves, minced 
•    1 tsp smoked paprika 
•    1 tsp dried oregano  
•    1/2 tsp ground cumin  
•    1 tbsp olive oil
•    Salt and pepper to taste

For the Tzatziki:
•    1/2 cucumber, grated and squeezed to remove excess water  
•    1/2 cup (120g) Greek yogurt  
•    1 garlic clove, minced 
•    1 tbsp lemon juice  
•    1 tbsp fresh dill, chopped 
•    Salt and pepper to taste

For the Flatbread:
•    4 whole-grain wraps or pita breads (~180g total) 

For the Salad:
•    2 cups mixed salad greens  
•    1 large tomato, diced  
•    1 small red onion, thinly sliced 

Method

  1. In a large bowl, mix Greek yogurt, lemon juice, garlic, smoked paprika, oregano, cumin, olive oil, salt, and pepper.
     
  2. Add the chicken thighs, ensuring they are well coated. Marinate in the fridge for at least 30 minutes or up to 24 hours.
     
  3. Preheat a grill or skillet over medium-high heat. Cook the chicken thighs for 5-7 minutes per side, or until fully cooked. Slice into strips and set aside.
     
  4. In a small bowl, combine grated cucumber, Greek yogurt, garlic, lemon juice, dill, salt, and pepper. Mix well and chill until ready to serve.
     
  5. Warm the whole-grain wraps or pita breads.
     
  6.  Layer each wrap with salad greens, diced tomato, red onion, chicken strips, and a dollop of tzatziki.
     
  7. Roll or fold the wraps and serve immediately.
