Chia Seed Overnight Oats

Chia seed is the ultimate seed and is thought to be the most nutritious food in the world. Full of omega 3, 6 and 9, antioxidants, protein, calcium, protein, magnesium and fibre, these little miracle seeds are anti- inflammatory, blood sugar balancing, satiating and great for detoxing the gut and bowels. The oats are high in B vitamins to support the nervous system as well as calcium for bone health. Adding honey, nuts and yoghurt gives a Greek breakfast feel and it’s the perfect breakfast to make ahead of time for an early morning start that packed with fibre, protein and healthy fats.

 Ingredients

  • · 1/2 cup rolled oats
  • · 1 tbsp chia seeds
  • · 1/2 cup Greek yogurt
  • · 1/2 cup unsweetened almond milk
  • · 1 tsp honey
  • · 1/4 tsp vanilla extract
  • · 1/4 tsp cinnamon

Toppings:

  • · 1 tbsp sliced almonds
  • · 1 tbsp pistachios, chopped
  • · 1/4 cup mixed berries

Method

  1. In a jar or bowl, combine oats, chia seeds, Greek yogurt, almond milk, honey or maple syrup (if using), vanilla extract, and cinnamon.
  2. Stir well, cover, and refrigerate overnight or for at least 4 hours.
  3. In the morning, give it a stir and top with almonds, pistachios and mixed berries.
