Chia Seed Overnight Oats
Chia seed is the ultimate seed and is thought to be the most nutritious food in the world. Full of omega 3, 6 and 9, antioxidants, protein, calcium, protein, magnesium and fibre, these little miracle seeds are anti- inflammatory, blood sugar balancing, satiating and great for detoxing the gut and bowels. The oats are high in B vitamins to support the nervous system as well as calcium for bone health. Adding honey, nuts and yoghurt gives a Greek breakfast feel and it’s the perfect breakfast to make ahead of time for an early morning start that packed with fibre, protein and healthy fats.

Ingredients
- · 1/2 cup rolled oats
- · 1 tbsp chia seeds
- · 1/2 cup Greek yogurt
- · 1/2 cup unsweetened almond milk
- · 1 tsp honey
- · 1/4 tsp vanilla extract
- · 1/4 tsp cinnamon
Toppings:
- · 1 tbsp sliced almonds
- · 1 tbsp pistachios, chopped
- · 1/4 cup mixed berries
Method
- In a jar or bowl, combine oats, chia seeds, Greek yogurt, almond milk, honey or maple syrup (if using), vanilla extract, and cinnamon.
- Stir well, cover, and refrigerate overnight or for at least 4 hours.
- In the morning, give it a stir and top with almonds, pistachios and mixed berries.
