Beef & cauliflower rice

Ingredients
- 2 tbsp olive oil
- 500g beef mince
- 1 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 red capsicum, diced
- 1 medium cauliflower, grated or processed into rice-sized pieces
- 1/2 cup frozen peas
- 1 tbsp soy sauce
Method
- Heat 1 tablespoon of oil in a large frypan over medium-high heat. Add the beef mince and cook, breaking it up with a spoon, until browned and fully cooked, about 5-7 minutes.
- Season with smoked paprika, and cumin. Remove the cooked beef and set it aside. In the same pan, add the remaining oil.
- Add the chopped onion, garlic, and capsicum. Cook for 3-4 minutes until softened.
- Add the cauliflower rice and peas. Cook for an additional 5-7 minutes, stirring occasionally, until the cauliflower is tender and slightly golden.
- Add the cooked ground beef back into the skillet with the cauliflower rice.
- Stir in the soy sauce and cook for another 2 minutes, allowing the flavors to combine. Serve hot.
